What we should do if we want to implement our token instead of ‘Testcoin’? When I changed the token symbol of ours and the token rate in Ethereum i.e. conversion rate but when I saw it is not picking that conversion rate. It was picking the default value set for Testcoin.

You need to configure your own Token and Crowdsale contract addresses too:
1. The ICO token address (https://ethereumico.io/knowledge-base/ethereum-ico-wordpress-plugin-configuration/#s20)
2. The ICO crowdsale contract address (https://ethereumico.io/knowledge-base/ethereum-ico-wordpress-plugin-configuration/#s21)
