All the checkout templates, and the checkout widget have the privacy link, and it’s not possible to remove it or change the link.

Hi?@thirdeyeblind82?, If you go to
WooCommerce > Settings > Accounts & Privacy > Privacy policy, you’ll see the option to edit the Checkout Privacy Policy text.

Here’s a screenshot of that. Also, you can create a new privacy page from there.
