Can this plugin connect to a external GraphQL API to create WordPress posts, custom post types and taxonomies?
Yes, the Enterprise plan of the plugin supports GraphQL APIs even REST, and SOAP API endpoints.
As for your requirements, we presume that you want to connect a GraphQL API endpoint to fetch custom post data from external resources and sync them as WP posts and their meta in your WordPress site.

Are API sources and keys stored securely/encoded and not accessible from the website frontend?
The plugin configuration where the API is configured is only accessed via the admin dashboard.
Is this plugin compatible with a WordPress multisite subdirectory installation and if so what pricing plan is applicable? Are multiple licenses required?
