Pre-Authorized payment with highier value

I am looking for a plugin that could handle this situation:

I am building a grocery store e-commerce, most items are by weight and they will have to do that calculation after the checkout process. I need the value authorized to be bigger than the actual cart value, or for me to be able to change the total value before capturing the value in the Woocommerce Orders.

I found some solutions but they always allow you only to charge less than the authorized value, so that way the store would always have to put less weight than was required.

Ex: Cart total $100, authorize $120 -> adjust the final after the weight to $106 or Cart total $100, authorizes $100 -> be able to change it to $106 After

Does anyone know a solution for this?
