Are you using Plain or HTML “Preferred Text Type” setting?
What does your “image template” setting look like?

My image template is “wordpress_default”.

I found out something interesting:

If I send the mail while the wp post-editor is in mode “visual” it doesn’t work.
So I turned the mode to “text”, left the editor and sent the mail again.
After that I opened the post and everythink looks fine!

That is very strange. Do you have a plugin that augments the visual editor?

Maybe the plugin “Custom Page” does so. I’ll try to find it out.

The easiest way to find out is to disable all plugins except Postie and switch the theme to twentytwelve (or other default theme) then run your test again.

Assuming it all works fine start by switching back to your normal theme and test again. Then one by one add the plugins back in testing after each one.
