Post featured image with text sample

SO my website is nearly done but something I have that I want to change is how the posts a presented in the different categories. Right now if you click on a category you will see all the posts under that heading in their entirety. What I would like is to either have the post only show the featured Image that you can select to be taken to the post or have the featured image, Post Title, and a preview of the text that has a ‘read more’ at the bottom.

Does that make sense? let me know if I can be more clear
