Postie is aware of WordPress oEmbed functionality so typically all you need to do is include the URL to the video. Note that some email clients add extra markup to the rich text/html version of the email. This can cause issues with WordPress not doing what your want it to.
The video tab specifically refers to videos that are attachments to the email. You can try it yourself by sending an email with a video attachment.

Maybe. Remember that Postie is like the post editor. The theme has the responsibility for the look and function of the post.

There is no “pro” version, but there are some paid AddOns. There are a couple that deal with categories and the one I think you are refering to just assigns a default category to a user. No more no less.
