Possible to match only a category /category/ or /post-category/

Hi I have many posts that will not be recreated in a new site development from old site, so I wish to redirect anything with /old-category/the-rest-of-many-posts

To a catch all /new-category/ but I am needing to do this 1 by 1 and as I have 100’s this is not simple work.

Can I use a contains rule rather than exact match as it needs to simply contain the old slug (/old-category/) and all posts after that trailing slash and redirect to a new catch all slug (/new-category/).
