Do you get this error while adding new project only? or do you get the error adding other post-types as well. Let me know further on this.
Try deactivating other plugins if you have any to check if any other is causing the issue.

@paddington63 : Sometimes it might just be the memory issue. So, can you try updating the memory to 256MB? You can read instructions at https://docs.woocommerce.com/document/increasing-the-wordpress-memory-limit/
