[Plugin: User Role Editor] How to just allow create/publish/edit post and nothing else

I’ve tried every variation of settings using subscriber as a starting role, but the user is always capable of seeing certain plugins, settings, etc. I just want the user to have access to creating, editing and publishing their own posts.
Anyone have any success with just those capabilities? it seems that as soon as you modify the subscriber role for more, you open up a whole lot more.
