[Plugin: Gravity Forms Custom Post Types] Newbie trying to understand Custom Post Types & GF

I’m a designer not a coder and have a lot of experience with WP & GF but not with custom post types. What we’re wanting to do is create a submission form to be able to add events to this page: https://writingitreal.com/community/local-readings.
I’ve installed Custom Post Type UI and the GF Custom Post Types plugin. I’ve created my first-ever custom post type (called readings) with 5 items in the taxonomy all assigned to this “readings” post type. I’ve created the Gravity Form. On the title field I went into Advanced and selected Post Type and chose my new custom type “readings”.
I’m struggling to figure out the rest. We only need a post title (called location), a website url for it and to know the region of that location (which is what I did with the taxonomy).
I didn’t see any way to incorporate the taxonomies into the form so I came here and found I was to use the categories option. So far I’m still not getting this all working. I’m wondering if instead of using taxonomies if I need to just be creating each region as its own post type? Would that be better?
Am I missing something obvious or trying to do more than this can do? I feel so close but so far! Thanks for your help.
