[Plugin: Contact Form 7] mail server setup documentation?

Surprisingly, the documentation, including https://contactform7.com/faq doesn’t appear to provide any information on where to configure mail server settings (I’m inheriting a site set up by someone else).
It doesn’t appear to use WordPress’s settings, because those are set at default (mail.example.com, etc.) It works, so I know it’s able to send mail.
Anyone?
