[Plugin: Contact Form 7] Can not change the "From" name

I am using contact form 7 as an order form, thus the from email is always the same, as is the name.

I have tried using syntax: [Canyon Oak Partners] <[order@canyonoak***.com]>

I have also tried the same without brackets, with quotes, etc…to no avail.

I continue to receive emails from “Unknown Sender”

Any advice is greatly appreciated.
