Theme changes help

Ok. so I am so new to this WordPress thing but making good progress. I like your theme a lot. it is stylish and everything. However, I noticed that there is no ” Theme Options” like some themes do. So please excuse my long list of questions.

1 – How on earth do I get rid of the ” Recent Post” line under the header image? Note that I did change the original image to another image, therefore I see ” recent post’ line that wasnt originally there.

2- How to have the menu elements move to the middle of the page? I tried to disable the ” float: left” but doing so will make radical unwanted change.

3- I noticed that when you click on a page, the header color turns to grey. How to have it black as it was?
