Placing text under attribute icon

Hi,
We’re selling variations of pillows i.e Cotton, silk & Velvet.
When a user hovers over the icons then a text box displays what the cover is however, we’d ideally like to place text underneath those icons permanently. Is this possible via php or css?
Secondly we get “no product available” message pop up when the white is selected for silk and velvet (no stock at this time) is there a way to hide that colour option when they two are selected or edit that message?

Yes, since that by default if one variation is out of stock, WooCommerce will hide it if you have Hide out of stock items from the catalog enabled under WooCommerce > Settings > Products > Inventory;
