Pickup dates all greyed out

Hi there

We previously used the plugin in 2020 for delivery collections and it worked well. However going to set it up again and on checkout all the dates are greyed out?

We also want to add a deliery option, but without the day/time option as it will be shipped when ready and via courier rather a specific delivery day. Cost of delivery is ￡7 and I cannnot see where to set this up? Or do I revert to WooCommerce shipping for this?

Any help appreciated as i’ve looked at everything and now my brain had fallen out my nose
