WordPress files on dedicated server?

This is a bit of a shot in the dark but I wondered if somebody might help:We have an instance of WordPress installed on a dedicated server (by OVH). Our developer set it all up and locked it down as much as possible due to his concerns about security. So we have been working solely via the dashboard.
We were creating a new site in WordPress (previous one had been in Mezzanine) and we were working on a subdomain: wp.watersprite.org.uk. We needed to test how to get it to the TLD when we were ready to switch the new site on. Someone on the team suggested we should just change it in the General / WP & URL settings. Which we did. And that was a mistake. Now we’ve lost access, can’t get hold of our developer and can’t get the site back.
Does anyone know how I’d even start finding how to access the files to change the site settings back? I can’t seem to work out FTP/SFTP access at all (my dashboard login details don’t seem to be working although I may have something wrong in the configuration) and obviously we can’t login to the dashboard now.
Any help would be very much appreciated. I realise testing it like that was very, very stupid. I was delirious on lack of sleep and very much regret it now!! And I’m definitely asking the developer to set me up with full access as soon as he gets back in touch.
