Well, are you sure you are on PHP 7.3?

You can check in Tools > Health Check.

Yes, 100% sure. I checked on the server c-panel and discussed it with a server rep on the phone. I have Bluehost and I’m on their highest php level 7.3

Well, this feature comes from WordPress core and as you can see here: https://kutt.it/oYeeBo it needs PHP 7.1 or newer.
