The Permissions-Policy header would be ‘greyed out’ in the plugin’s settings if it is already being set elsewhere, outside of Really Simple SSL.
And if you test your domain with a tool like SecurityHeaders.com, you will indeed find that there’s already a Permissions-Policy header set, so that explains why it happens.
Once the header is removed from the location where its’ currently being set, you can configure it in Really Simple SSL instead. Most-likely you have the header configured in the .htaccess file, or with a different plugin for example.
