I don’t know anything about the technique and if I were interested I wouldn’t have any plugin.

on the other hand what I can tell you is that I have a plugin (yours or another one I forgot) Stripe on my site since January 1st 2017 at least (from the Stripe website)
and that this is the first time I have a payment problem due to lack of communication between Stripe and my site

Does that mean it is an isolated case, and you can not consistently replicate the behavior by placing a test order?

It will be great if you could share your current System Status Report. You can get it by navigating to the WooCommerce / Status section of your site. Once there, click on the Get system report button and then copy it by clicking on the Copy for support button. Then paste it here in a comment.

Next, enable Stripe debug logging, in WooCommerce > Settings > Payments > Stripe, attempt to place a test order, head to WooCommerce > Status > Logs and in a dropdown, find a Stripe error log timestamped around the time they did a test order. Select, that, click view, copy the log and send it to us.
