• I’m seriously considering converting my present static html site to wordpress. At present this site has almost 200 pages of content in about 6 different “categories”.
Would it be better to make this present content pages or posts? Which would be easier and less complicated to access for my visitors?

If it has to be under some categories then you should choose “Post”. Pages don’t support categories.

as a rule of thumb if you want comments its a post, if not its a page (even tho both will do comments).

Six categories sounds like six parent pages to me ?? I would use pages. Then I could easily add a blog to the site if wanted later.

For ease of access, I might create a shortcode to go in the parent pages, to list the child pages alphabetically.
