Overriding styles from a plugin

If I want to add some of my own css styles to a plugin like let’s say, nextgengallery, do I simply copy the stylesheet of nextgen into my custom theme folder and make the changes there? I imagine that if I make the changes into the plugin folder, all my changes will be lost if the plugin gets updated?
