i want to edit item.php in templates/listings but it it wont pick up my version – ive tried using the same file path in mytheme/wp-car-manager/templates/listings and just putting it in mytheme/wp-car-manager/ but neither worked. Any solution?

Zaanmedia’s solution should work. Please re-open issue if this is still not working for you!
