Organizing tons of CPTs without Woocommerce

Hi all,

I am building an eCommerce site without the eCommerce part. It’s more of a brochure site, where you can browse the same as eCommerce but you can’t purchase anything.

If I use Woocommerce, I feel I would have to remove so much that it would involve just as much work as building my own system using the CPT UI plugin. But when it comes to permalinks, custom templates for each category, pulling in related products, I’m making a mess.

Anywho, I was wondering if anyone could guide me on creating a brochure type site – should I use Woocommerce or build my own? And either way, could you provide some insight/links/resources on building custom templates for product categories/CPT categories?
