It is a little challenging for us to try to figure out what might be causing this as it is not happening consistently.
You need to work on your staging site starting with a basic setup with just WooCommerce core and default Storefront theme and check if the JSON response is triggering correctly.
From there, change the theme to Astra and keep monitoring/testing, add the other plugins one by one testing after each until you find out what is probably causing this behavior.
Since the issue here doesn’t seem to be related to WooCommerce core itself I’m going to close the thread now.
If you’re still not able to find a solution here, in that case, the next option would be to hire a developer that can access your site and Postman, and take a look at what’s going on. There are freelance developers at Codeable who would be happy to help you out – https://woocommerce.com/codeable/.
