Order item fields for custom template

Hi all,

I am trying to build a custom invoice template to display taxes and subtotals in a particular way, but I am struggling to find information about the item fields as used in the original template.

For example, the default template uses a $item[‘ex_price’] field that I cannot even find mentioned in the WooCommerce code reference guide on Github.

Any hints on where to look at?
