Opt-in not Opt-Out

Gutenberg is not ready yet and should remain a plugin until it consistently pleases those that are using it.

A feature that would allow you to turn it on and off for different post types such as use Gutenberg for posts but not pages. It is lacking the functionality/customization necessary for anything other than the simplest of blogs such as Medium.

If they can make it to where I can move an img block and place it into a paragraph block without the float destroying the child/sibling elements I might have a bit more hope for this.
