Open one date only

Could you please let me know, step by step, how I can set one date only ? Reason : this plugin is used in my case for an event that occurs once every 3 months during one day with 10-15 professionals who are available for 1-hour sessions.

I couldn’t find how to do that, please help me. I found kind of a compromise that I had to do manually but it took me ages.
