Only Few Fonts Options On Template Editor and hidden Defaults

I am using WordPress Theme Twenty Twenty Four.
When I edit elements in the Content block, I have a choice of any Google Font for the Font Family.
But when I am editing the template (i.e. the area above the Content block where a cover photo can be inserted), I only get a choice of 5 fonts (default, inter, cardo, System Sans Serif, and System Serif.
I have 2 questions:
- How can I get more font choices for that area above the Content block?
- How can I change whatever the “Default” font is? All the research I have done seems to suggest that the area for that is something that has been changed for this new theme. I cannot find where to set Default Font, Default Buttons, etc.
