When complete:

.llms-lesson-preview.is-complete .llms-lesson-complete { color: red; }

When incomplete:

.llms-lesson-preview.is-incomplete .llms-lesson-complete { color: grey; }

the solution by @chris_dev should work too but I’m not a fan of using !important
