Oh my god, desappear all my variables, I HATE 3.0

1- I create an Attribute.
2- I click to “Save Attributes”.
3- I try to create a Variation,
I Cant. Cause the Attribute that i created not exist.

Can you screenshot me the attribute you create?

I think you may still have an error on variation save – I suggest you deactivate other plugins and switch to default theme to retest, then narrow down the conflict.
