I understand that you are experiencing issues with the card fields not displaying correctly on the checkout page when using older versions of iOS. This issue seems to be specific to the new checkout experience on devices running iOS 12 to 14.

I would first recommend you continue using the legacy checkout as you mentioned, while we investigate this issue further, so that not to have your customers stranded on the checkout page.

In the meantime, I’d like to understand your site properly. Please share with us your System Status Report which you can find via WooCommerce > Status > Get system report > Copy for support.

Thank you for sharing your system status report. From my review, everything appears to be working on the WordPress and server side, with the necessary features active and no glaring issues.

Referencing Stripe’s documentation about Apple Pay, I see that Stripe users can accept Apple Pay in iOS apps from iOS 9 and up, and on the web in Safari starting with iOS 10 or macOS Sierra. So, I’m curious about what’s happening on the checkout page when using the iOS versions you mentioned. If possible, could you send us a recording showing what you see on these devices compared to a newer one?

However, an immediate workaround, you can indeed continue using the legacy checkout, as it is showing the card fields correctly.
