I am setting up a site that is trying to appear more static then a blog. I have found a way with help on here to take away the request text for comments, and now I have a similar request. Is there a way to hide categories and not use them? Please check my site at mscginc.org and under the pages bar, there is a bar that lists categories of posts. For the style and purpose of the site, it will only confuse and clutter. Can I get rid of that line?

WordPress uses the_category to show the category. You could remove that and any surrounding divs from your theme files, including your index.php, your single.php, and your category and archive template files.
