Not show all categories and search not working

Hi! I have a blog with many categories, but not all categories show in Gutenberg Editor.

I have 225 categories in my website and don’t have time to delete more os than and create redirects.
In Gutenberg, have 2 problems: the search field not working for get ALL categories, and only show a few.

So we have an estimation time? And i have another question: i updated the WordPress to 5.0.3, and the Gutenberg have a WordPress plugin. Do I need to have this plugin active in WordPress? Would it conflict with 5.0.3? Sorry for my bad english.
