Not sending emails when CC/BCC fields not populated

We are running Pinpoint Booking System Pro and are hitting an issue with the system not sending emails due to this error on the email log:
Invalid “Cc” e-mail address “<>”
It appears that these angled brackets might be inserted automatically by the plugin, see line 215 on /includes/class-notifications.php for example
We are using SMTP to send emails and I can confirm that the system does work for all other WordPress emails. It also works if I populate both the CC and BCC fields.
