you are not taxing your orders with VAT? No, these orders would not be suitable for reports as orders with a VAT amount of 0 will be skipped and are not subject to the reports. See: https://github.com/vendidero/one-stop-shop-woocommerce/blob/main/src/AsyncReportGenerator.php#L200

If I include VAT in my orders just for the purpose of having the report, for each country will appear also the full amount of the orders or only the vat amount?

both the (total) net amount and the (total) VAT amount is included in the reports..
