1. There is no need to have an uninstall button, because when you delete the plugin in WP-Admin -> Plugins, it will trigger the uninstall process of the plugin. The word data is there because there is an uninstall.php file in the plugin https://github.com/lesterchan/wp-polls/blob/master/uninstall.php.
So please, don’t tell me you know about it. I have been developing plugins for more than 10 years and I still don’t know everything about WP.
2. It is in WP-Admin -> Polls -> Poll Options https://imgur.com/KCYgAhE. Just check “Use CSS” and change the BG color and border there.
3. Did you even try to add it as a widget?
I agree with you, ” Just make a good product – not prove it.” That is so true but for every good product, there are always users like you who don’t appreciate the effort behind it and rate it one star just because it is not suitable for you or you don’t know how to use it.
