Navigation Menu Questions….

I am a newcomer to WordPress and am currently constructing a website.
I’ve hit a snag where I will either need to be able to edit the navigation links or create a new one from scratch.

I need the following, either to:
To Edit the existing menu
– To exclude certain pages from the menu
– To be able to rename one of the pages links in the menu
– To reorder the page links in the menu

or

Build the menu from scratch.

Any ideas or suggestions would be much appreciated.
