We believe this does work for your intended setup. You will need to use a Multi-site and use separate Zettle accounts per location. When you don’t sync the WooCommerce products between the multi-sites and have individual Zettle user IDs it should stay completely separate and not cause any issues.
However, we cannot confirm this will work with any ad-on and would advise testing every setup in a testing environment before deploying in your live environment.
Also, if your stock is syncing with a plugin between the multi-sites, you will most likely have a stock issue on the Zettle product list. Zettle will sync along with the changes of WooCommerce, so can’t be linked in this way.
