Multisite from working site, subdomains and cPanel

  • I have a WP site working on a main domain.
    Site is hosted with cPanel, at root, public_html
    I have already some subdomains with another apps running:

    When I enable multisite it asks to disable plugins to begin installing multisites. Is it safe to disable all plugins and re-enable after it? Will I loose settings/data from plugins after multisites installed?

    I read I should add the * wildcard subdomain in cPanel, etc. Will this affect the other already-working subdomains, right? Also, how can I make * subdomain to be at bottom in cPanel (I’ve read somewhere it should be at bottom)
