You can install WP FullCalendar as mentioned from the documentation then use a shortcode like the following [fullcalendar category="CATEGORY_ID"] to display Events to a Calendar with specific Categories.

What if I would like to display events with a particular category in a calendar, but would like to exclude events with that very category from my other calendar?

you can try shortcode like [fullcalendar category=”-X”] where X is the events category ID and negative ( – ) sign means excluded.
