I have built a volunteer application form with a lot of questions.
The only field that came through were these:

    From: Sharon Jackson <[email protected]>
    Subject: [your-subject]

    Message Body:
Thank you very much for the opportunity to volunteer

This e-mail was sent from a contact form on Warmland Restorative Justice (https://www.warmlandrestorativejustice.org)

You can see the mail tab here

You need to include all the other mail-tags in the Message Body field that you can see highlighted in bold in the Mail tab.

    e.g.
    From: [your-name] <[your-email]>
    Your preferred name: [your-preferred-name]
    Your age: [age]
    Your address: [textarea-address]
    etc etc

    Subject: [your-subject]

    Message:
    [your-message]

What I meant to say was that the message was There was an error sending your form, please try again later.

If that error message had an orange border then it thinks your submission is spam. If that error message had a red border then there is an issue with your mail server:

    https://contactform7.com/faq/after-submitting-the-form-i-get-an-error-message/

It is possible that all those mail-tags together with no context is being viewed as spam.
Try adding a few in the message body to start, one on each line, with a hardcoded text descriptor. e.g.

    From: [your-name] <[your-email]>
    Your preferred name: [your-preferred-name]
    Your age: [age]
    Your address: [textarea-address]

If that goes through, add a few more, but always on new lines, and always with some hardcoded text.
