MonsterInsights integrates with Google analytics, and we already integrate with Google analytics, So technically both of them should work parallelly

We need to pass custom dimensions such as author, category, published date and tag so we need to set this up for AMP as well is it possible within/with AMPforWP?

Yes. It is possible. We have an option to pass custom dimensions.
