Modifying post types

Can somebody point me in the direction where I might find out how to modify the post types (audio, quote, etc.). I’d like to make my own post types and sub templates. I already have a child theme, so you can skip that. I just need a pointer to the points in code where I can modify

1) the names of the post types
2) the templates loaded
