Manually edit meta / social previews

Recently I’ve been trying to control the way my WP posts are “previewed”(/”embedded”) in social media/chat apps. From what I’ve seen, most read some very specific <meta> properties off of the HTML header (Genius!), but there’s no way to control what shows up ahead of the html body, especially not globally.
The closest plugin I found was the Head Meta Data plugin, but it is too cluttered with a prebuild form, and doesn’t offer much in the way of variable stuff like the post cover and such.
In summary, what is the best way to customize social previews via indirectly but clearly interacting with the <meta>?
