Make functions.php changes that don't get overwritten on CF7 update

I’ve used the solution in this thread:
to format CF7 emails so each checked checkbox option appears on a new line instead of as comma separated values.
This solution works perfectly but involves editing CF7’s functions.php file.
As a result, when CF7 gets updated, it overwrites this change and goes back to putting all checked options back on one line in the email.
So I’m wondering if there’s a way to implement this change elsewhere (or in another way) so it stays permanently even after updates?
