I shouldn’t have to override your CSS to apply CSS that is being applied by my theme for paragraph tags, think you missed my point here.

The CSS you are talking about are defaults in MEC.
Your theme must be coded in a way to override these. Or you can write your own CSS for apply. this is not a problem in practice.
