Label of “Select all”

Hello! Id like to know if its possible to change the default text for all the products in the shop, which is actually “Select all” in the dropdown. My website is in Spanish so id like to set it as: “Todos” or “Seleccionar todos”
At the same time, is it possible to hide the “Uncategorized” category?
