Yes, all of them. If it starts working again, as you say, turn them back on one by one until it goes wrong again so you can figure out the culprit.

In an ideal world, you’d have an identical non-public development blog that you can test new upgrades, theme changes and new plugins on etc before they go live. But if you don’t (and I’d imagine 95% of people don’t…), well, posting is posting isn’t it. Just work quickly. Might be wise to also temporarily remove any ‘Update Service’ you’ve got listed (see Admin > Settings > Writing) to stop search engines being notified that you’ve got a new post each time you test.
