Jigoshop Smart Coupons – Adding product variable to coupon email

I recently purchased Jigoshop Smart Coupons extension for use on https://www.plantbasedalchemy.com/courses/
The client has a number of courses available and wants to offer gift vouchers for each course. So for example there will be a Health on a Plate gift voucher worth £299 available for sale, which will only be valid for use on the Health on a Plate course.
After running some tests, I haven’t had any issues linking vouchers to specific products, and have been able to edit the Smart Coupon – Product Discount email which is sent to the voucher recipient on purchase, however neither the name of the voucher product purchased, or the name of the product which it is valid for use on are available in the listed variables.
This is fine if the user is purchasing the gift voucher for themselves, as they know what they bought, and also have the other confirmation emails. However, if someone is purchasing the voucher for someone else, that person has no way of knowing which product they can use the code on.
Do you have any suggestions on how I can get access this information in this email? Or alternative suggestions on how I can set the vouchers up that will enable us to tell the recipient which product they can use it on?
The client lives in a remote area without internet access, so ideally we do need to be able to send at least the name of the course, or the voucher product purchases (as this includes the name of the course) automatically on purchase.
